Berry Crumble

Berry Crumble

Ingredients

FILLING

500g frozen mixed berries

2 tsp vanilla extract

1 Tbsp maple syrup

 

CRUMBLE

1 cup rolled oats

1 cup desiccated coconut

½ cup brown rice flour

¼ cup coconut oil, melted

½ cup maple syrup

Juice of ½ a lemon

 

Directions

  1. Preheat oven to 160 degrees celcius
  2. FILLING- Add berries to a pie dish along with vanilla and 1 Tbsp of maple syrup and mix
  3. CRUMBLE- In a separate bowl add oats, coconut and flour and mix
  4. Add oil, syrup and lemon and mix well
  5. Transfer crumble to the pie dish and spread evenly over the berries, being sure to spread all the way to the edges
  6. Cook in the oven for 30-35 minutes or until crumb is golden
  7. Serve with ice-cream or coconut yoghurt.

 

Gluten-free alternative: use gluten-free oats or puffed rice
