Berry Crumble

Berry Crumble
Ingredients
FILLING
500g frozen mixed berries
2 tsp vanilla extract
1 Tbsp maple syrup
CRUMBLE
1 cup rolled oats
1 cup desiccated coconut
½ cup brown rice flour
¼ cup coconut oil, melted
½ cup maple syrup
Juice of ½ a lemon
Directions
- Preheat oven to 160 degrees celcius
- FILLING- Add berries to a pie dish along with vanilla and 1 Tbsp of maple syrup and mix
- CRUMBLE- In a separate bowl add oats, coconut and flour and mix
- Add oil, syrup and lemon and mix well
- Transfer crumble to the pie dish and spread evenly over the berries, being sure to spread all the way to the edges
- Cook in the oven for 30-35 minutes or until crumb is golden
- Serve with ice-cream or coconut yoghurt.
Gluten-free alternative: use gluten-free oats or puffed rice
