Stonefruit Frozen Custard Ice-Blocks


Hello, me again! Just bringing you another stonefruit and custard recipe because they are a dream combo and balance each other out perfectly. My last recipe (which was posted a minute before this one) was a Stonefruit Parfait, and now we're going to take the fruit and custard and freeze them into ice-blocks because, why not?

If you're in Australia right now, you will understand when I say this heat is crazy, which is why I highly recommend keeping a few of these ice-blocks in the freezer for desperate times- aka, when it's too hot to eat anything else.

Here's the recipe.





1 peach, diced

1 apricot, diced

1 cup soy milk

1 1/2 Tbsp cornflour

1/4 cup maple syrup

1 tsp vanilla extract

Pinch of tumeric (for colour)

Sprinkle of cinnamon and nutmeg



  1. Add the milk and dry ingredients to a small saucepan

  2. Whisk until everything has dissolved

  3. Place over a medium heat and add remaining ingredients

  4. Continue stirring until mixture begins to thicken and remove from heat

  5. Pour custard into ice-block holders, about 3/4 full

  6. Add a bit of fruit to each ice-block and push down so that the fruit is mixed throughout the entire ice-block (you could mix the fruit into the custard before pouring into the holders but there will most  likely be too much custard for the amount of fruit)

  7. Place ice-blocks in the freezer and allow a few hours to freeze

  8. And you’re done, ENJOY!
