ANZAC Biscuits

 

 

Happy Anzac Day! We all know this day has a much greater meaning than eating some tasty treats, but Anzac biscuits are an Australian tradition that EVERYONE should be able to enjoy, whether you're vegan, gluten or dairy intolerant, sugar free etc. That's why I felt I should recreate this recipe using healthier, plant-based and gluten free ingredients. I have included oats BUT not to worry, I've added a gluten free alternative. Let's do it!

 

 

INGREDIENTS

 

1 cup rolled oats (GF version- quinoa flakes)

1 cup desiccated coconut

1/2 cup almond meal

1/4 cup coconut oil

1/4 cup maple syrup

1/2 tsp bicarb soda

1 Tbsp water

 

 

DIRECTIONS

 

1. Preheat oven to 120 degrees celcius

2. Add dry ingredients (excluding bicarb) to a large bowl and combine

3. Add maple syrup and oil to a saucepan and heat over a medium heat

4. In a small bowl, mix bicarb and water and add to the saucepan

5. Mix until liquid becomes frothy

6. Pour wet mixture into the dry and combine well

7. Roll mixture into fist-sized balls and place on a lined baking tray

8. Gently flatten to desired thickness

9. Bake in oven for approx. 30 minutes, or until golden (they will harden as they cool)
